you need to watch the memory,cpu, and disk throttling as usage increases. its not so much the number of domains on one ip, its how much can that server handle under a load. you could have 1 domain that gets banged away on the server and bring it to its knees..
You could park a million sites on a single IP if you used a reverse proxy and a cluster of servers
