I'd be much more concerned with any host who is willing to just set up mysql and never tweak it again regardless of the servers workload.

not true, you can change almost all the variables from the mysql command line on-the-fly.
SET GLOBAL [varname]=[value]
then edit your my.cnf so it will remain next time the server is restarted.
