I love cooking with Spaghetti Squash soo tasty compared to pasta you should definitely try the recipe Jim posted. And if you want something lighter then just brown some onions, green peppers in olive oil throw the spaghetti squash in too to heat all up, then throw some diced tomatoes and parmesan cheese on top to serve.

I also make this moroccan chicken if you are into bbq it is fantastic. A lil' bit of a spice to it, I like to serve it with some garlic sause or tzatzki.
Basically you just need throw the following things into a non metallic dish stir them all together and add your chicken to marinade for as long as possible.
Ingredients: 3 tbsp olive oil, 4 tbsp lemon juice, 2 tbsp chopped fresh parsley, 2 tbsp chopped fresh cilantro, 1 garlic clove, finely chopped, 1tsp ground coriander, 1/2 tsp ground cumin, 1 tsp sweet paprika, pinch of chili powder (to taste). Serves 4.
Okay and finally I will offer up my chicken divan recipe, but I could babble on about recipes all day so hit me up if you need more
Ingredients:
- 2 cups broccoli
- 3 Tbsp butter or margarine
- 3 Tbsp all purpose flour
- 1/2 tsp pepper
- dash ground nutmeg
- 3/4 cup light cream or milk
- 1/2 cup chicken broth
- 1/2 cup shredded Swiss cheese
- 2 Tbsp dry white wine
- 1 1/2 cups cubed COOKED chicken
- 3 Tbsp grated Parmesan Cheese
- Paprika
- Preheat oven to 350 F
- Cut broccoli into small pieces, cook, drain and arrange in a 10x6x2 inch baking dish.
- In a medium saucepan, melt butter. Stir in flour, pepper and nutmeg. Add cream or milk and chicken broth all at once. Cook and stir until thickened and bubbly. Add Swiss cheese and wine, stirrring until cheese melts. ( I always add about 1/2 cup of mozzarella cheese too, and maybe a little bit more wine to taste).
- Pour 1/2 of the sauce over the broccoli. Top with chicken and then the remaining sauce.
- Sprinkle with Parmesan cheese and paprika (to taste).
- Bake in a 350 F oven for about 20 minutes or until heated through.
