I love cottage cheese in my omelet. But I usually put inside with the other ingredients.
Also a few spoonfuls of sour cream is a nice addition along with some muenster or yellow american cheese. For veggies I like freshly diced tomatoes, chopped green peppers and onion and always mushrooms.
