Niche = "nish" (unless you're french)
These three sortof each belong to someone, but I think they go like this...
GIF = "giff" (not "jiff")
JPG/JPEG = "JAY-peg"

I say, pronounce foreign words the foreign way, so I say "neesh" for "niche." Our soft "i" sound, (the one you find in "is," "in," "fix," and so on) hardly exists outside English). In most languages, "i" sounds more lick the English "ee."
English speakers seem to have an inherent fear of foreign phonetics so words tend to get "Americanized" or "Anglicized."
