If he's gained eleven pounds in a week eating 1200 calories, that's a problem, and a sign that his diet is not in order. No matter how you slice it, 1200 calories in a day for a 276 pound man is a bad idea , especially if he is exercising vigorously. This diet will result in a failure to change the composition of his body and possible health problems before long if his estimate is really accurate. His basal metabolic requirement is well over 2000 calories, and he could actually be losing weight and fat safely, steadily and slowly while truly gaining muscle that he will keep by eating clean foods over in that range. It's a lot easier to make progress that way.
