all of this is true if you are not a Canadian OR US citizen.
if you are a US citizen - you have to comply to 2257 no matter what.
if you are a Canadian citizen - you have to comply to Canadian laws no matter what, but It would be a good idea to show good intentions to declare that models on your site are over 18 and you have proof of that.

Absolutely. when you deal with images or videos of adult nature - regardless of where in the world you live, you always want to make sure you have the proof that all persons depicted were over the age of 18 (or whatever the legal age of consent is where you live) when photographed. Furthermore, you want to check out with a lawyer familiar with local laws to make sure you have everything within local requirements. I personally include following in my disclaimer:
This is a Canadian owned website and accordingly follows the laws of Canada in regards to records and privacy. Entering from the USA may be a violation of your national, state, local, and/or federal laws, do so at your own risk. Misrepresenting your age or identity in order to enter this web site from a location within Canada, or elsewhere in the world, may be a violation of your national, state, local, and/or federal laws.
All persons depicted herein were 18 years or age or older at the time they were photographed or filmed. This web site is not produced within the USA however my record keeping complies fully with USC § 2257 in respect of the keeping of records to verify the age of all contributors on this site. Records are kept at the place of production in Canada and may be inspected as required by
local laws.
...keyword being "local" - not US laws. FBI will have no authority over you if you live in a country other than US. The disadvantage of hosting in the US if you're a Canadian living in Canada is that your host may require you to comply with their laws. Even if it's a Canadian company with servers in the US.
PS - didn't mean to hijack the thread. I recommend checking out canaca.com but it was already mentioned here
