I spent there a few years, even during intifada al-aksa.
What is real danger are israeli drivers. There is much higher nomeber of dead in the streets becouse of their car driving then the conflict.
Tel-Aviv is good place for swimming, drinking and even more fun. Eilat as well and you can dive there. Corralls are very impresive there.
If you like history and mixed culture - go to Jerusalem. I was there in this spring and the old city was full of tourist, so it is not pleasant as during intifada. You can go with no worry to Betlehem or othe palestinian places.
Ask some locals about the situation before, but nothing happens there now.
Sderot is a few km from gaza - it is not interesting to go there anyway.
