Yep, done that...still chasing someone (who posts on this board) after I went halfway on the finances and never got anything delivered.

My suggestion to your specific situation is simple:
Find a producer who communicates well with you. Fly to their place of business and work with them hand in hand for a couple of shoots. This way they can not only see the finished product but they also get to see EXACTLY how you want it produced. This will cost some money out of your pocket but at the end of the day, it's well worth it since you will be getting exactly what you expect/want/need.
You're exactly right - fetishes are difficult to get right, but I still can't believe that there aren't some people (I'm not talking about the high-end folks who are booked for months in advance) who don't want to to learn in return for regular monthly work. And I've flown my in-house (albeit part-time) photog to several places for that very reason; one time it worked out well, but then the studio got so involved in their own stuff that they didn't have the time they though they would to shoot for me.
