The pig must be kept alive because they are counting on its heart to pump out the blood. That is why the blood flows out like a bag of beans... The heart is pumping it out. The pig feels that knife go in... It just doesn't react because it is stunned and in shock.
As for the guy talking about the farmer killing the pig. Are you sure it wasn't just nerves? Most head shots result in body twitching that lasts for a few minutes to as long as ten.

Its wierd because i grew up on a farm so im not new to how they slaughter animals but i have only every seen them slit them not electrocute them..
Thansk for the info.. Its quite similar to how they do butterball turkeys. They zap them on the neck then drain the blood , then zap them again with a larger dose to kill them
