Are you re-encoding the videos with iTunes first? The videos have to be converted to the h.263 format. Make sure they play fine on your computer first, I've found iTunes doesnt always convert the videos properly, depending on the source format.
My iPod works just fine, I mainly just use it for its tv-out capabilites
