Like you said real crashes are more like crunches, rather than high pitched crashes.
It might be how they microphone crashes for movies, as opposed to hearing the sound in realtime with natural ambience mixed in - the sound is more muffled, but nonetheless conveys a very sinister and devasting effect.
I'm still amazed that anyone could survive the carnage which I saw. It's a credit to the safety features built into most cars these days.
