These are my general rules for trying to avoid this type of situation. So far, so good.
Don't approach them first. Place an ad and make them contact you. It should always be their idea. They decided to pursue adult employment before ever speaking to you.
Don't try to talk them into it. After explaining the job, if they still seem unsure then ask them to take some time to think about it and call you back when they're ready for an interview. You'll lose a few leads this way, but it's better than having them freak out during/after the shoot.
Do your interviews in a neutral no-pressure public place like a restaurant or a coffee shop. Not a bar. Answer all questions honestly. Make sure they understand exactly what will be expected and how the content will be used.
Respect any expressed limitations. If she says she isn't comfortable with boy/girl work, doesn't do anal, whatever, then don't offer her that kind of work. It's not difficult to get a girl to bend her boundaries for money, it's not a challenge, it doesn't make you pimp, it's not worth it. Definitely don't surprise her during a shoot with anything she hasn't already agreed to.
Finally, while scheduling, give her your most sincere "Are you sure?" speech. Ask her directly if it will keep her awake at night knowing there are naked pictures of her on the internet. Ask her, what if someone she knows sees them? Try to scare her off. But by now a reasonable amount of time should have passed since she first contacted you, this is at least your 3rd conversation, and while I've never had anyone back out at this point, I still go through it just for my own peace of mind.
