Editing is easy to learn. PC or Mac doesn't matter except insofar as you may already have one or the other and be happy with it or perhaps you want to save money with PC components over more expensive Mac hardware and software. You should download trial versions of the editing apps you want to try like Adobe Premiere (which I prefer) or Sony Vegas and see which you like. If you want to switch to Mac that's up to you, FCP is a powerful app too.
