WAS pretty easy, since last 3/4 years it's a fucking pain in the ass even to go on vacations, I was several times there, I've european papers (Italy) and every fucking time there are more and more restrictions, I almost had to make a promise sealed with blood that my wife wouldn't stay there as an illegal inmigrant after I leave the country... and she's the daughter of a basque!!
On to the topic, I'd say most Latin American countries, and within those, the most recommended would be Mexico, Brazil, Costa Rica, Argentina, Chile and Venezuela (in no particular order). I heard New Zealand is easy for US citizens, same for Fiji, but really not sure
