It's actually pretty easy to make a picture like that.
Compact Canon digital cameras have had a panoramic or 360 degree feature for as long as I can remember.
For that bridge picture you would put the camera on a tripod, tilt the tripod head to put the camera in a vertical "portrait" position.
Snap all the pictures and then use the Canon PhotoStitch software to piece it all together into one big image.
