Highly unfair question. Turkey is a whole animal, ham is only a part of one.
Now if the question was turkey or pork. Pork would win hands down.
Assuming I must stay with "ham" I think I would still go ham. As long as "ham" in considered a bone in raw piece to work with. I could do an unbelievable amount of different dishes based on that alone, from using the meat to the bone.
