Servers are a nightmare enough without throwing in a lack of software and a nightmare of a installations finding a programmer to get the scripts working on mac.

What possible advantage coulda mac server have? Unix don't crash and its software is the standard.

MacOS X is a BSD branch *nix. What leads you to think there would be any trouble with perl and php scripts running on that platform? Right now, the Mac is a well-polished, well-tested Unix box with a decent GUI, not some mysterious third paradigm.
