Since Judaism is an ideology and not a race, if someone who calls themself a Jew doesn't actually believe in Judaism, then they are not a Jew.

Albert Einstein was born into Judaism but ideology-wise was actually a Scientific Pantheist. Ergo he was not a Jew for at least most of his adult life, since the Jewish position and the Scientific Pantheist positions are mutually exclusive. It is possible however, to retain cultural aspects of an ideology without belonging to that ideological meme. Ie, someone can exhibit Jewish cultural practices (to an extent) without actually being Jewish.

I've got plenty of friends in London who call themselves Jews but who are not actually Jews.
