I had had a large post typed out and decided to keep it pithy.
I think a wait staff being paid a higher hourly wage will serve as well or better than a wait staff going up and down in mood every moment based on great or shitty tips. Personally, I'd want the higher steady hourly wage and no tips.
But thats not the way it is, so.. I cook, lol.
