Beer can chicken:
Get a 4-5 lb chicken. Remove giblets and fat from cavity and rinse inside and out with cool water. Take a 12 oz can of beer and drink half of it(I also use some of the beer to soak the wood chips in). Using a church key style can open, pop holes all the way around the top of the can. Fill can back to the top with chopped onions, garlic, spices(your preference) and some BBQ sauce. Keeping level, insert beer can into chicken cavity, open end of beer facing up towards neck. prepare grill for indirect grilling( drip pan in middle, coals on either side). When hot, stand up chicken on beer can and pull out the legs to make a tripod. Fold wings back behind neck area. Add wood chips and cover grill. You need a high dome grill, I use a Weber kettle. Cook for 1- 1 1/2 hours until done.
It's very tasty and I recommend making 2 at a time because it will get eaten up quick.
Be very careful when taking off the grill, use tongs and a spatula and don't get boiling beer on yourself.
