I agree, but I was trying to look from that instructor's point of view.
He claimed/agreed that the defender could only grab his hand (aka do that cool move from the beginning of the video) if he knew what exact kind (that demonstrated in the beginning) of movement the attacker would do.
So if we take that ^^^ for granted then it should be even easier to grab the knife when the attacker is doing no movement at all.
